Sugar Free Fruit Muffins

As I am trying to be good and eat less sugar I decided to try out these sugar free muffins. That way I can indulge my sweet tooth in a healthier way whilst still feeling like I’m being naughty.

They’re super easy to make and a tasty treat. Plus you can freeze them so you’re not tempted to scoff them all at once.

INGREDIENTS
225g Plain gluten-free Flour
1tsp Gluten-free Baking Powder
1tsp Ground Cinnamon
50g Melted Dairy Free Butter
175ml Almond Milk
100ml Clear Honey
Egg Replacer for 2 Large Eggs
140g Fresh Fruit
140g Seedless Raisins
100g Dried Cherries/Apricots

Preheat the oven to 200 degrees.
Measure out the flour, baking powder and cinnamon and combine in a bowl. Stir in the fruit and set aside.
In a separate bowl combine the eggs, milk, honey and melted butter and whisk.
Pour into the dry mixture and loosely combine (do not over mix or they will not rise).
Fill 12 muffin cases and pop in the oven for 20~25 minutes until risen yet pale on top before leaving to cool.

Then they’re simply ready to eat. Enjoy!
